
(NC) – The summer season is upon us and that means barbecues with family and friends in the backyard. Canadian chef Michael Olson shares his Quick Chicken Marinade recipe and chicken prep tips:
“Part of my outdoor grilling ritual involves marinating chicken in a pungent sour concoction to boost the flavor,” says Michael Olson, Canadian chef and professor at Niagara Culinary Institute. “One must always be careful when handling raw meats. Michael Olson’s Quick Chicken Marinade for Grilling
Makes enough for 4 breasts
Blend together and marinate chicken for 15 minutes prior to grilling. Baste chicken with remaining marinade up until the last 5 minutes of cooking.
